Along with cholesterol, the fatty substance triglyceride is clearly related to atherosclerosis (hardening of the arteries) and coronary artery disease. It has been known for some time that diets low in cholesterol and fat and high in vegetables, fruits and whole grains result in lower triglycerides in the blood.
