Gluten Free Diet


Gluten is the protein part of wheat, rye and barley and a few other grains. If a person has the genetic makeup for celiac disease, then this protein causes inflammation and damage to the lining of the small bowel or intestine. This, in turn, may cause a variety of symptoms and problems such as diarrhea, abdominal discomfort, weight loss, vitamin and mineral deficiencies, fatigue and weakness. Celiac is the most undiagnosed gastrointestinal disease in the country. The diagnosis has not been made in 9 out of 10 people who have it. So, it is a huge public health problem
